2 Tbsp olive oil
2 cloves garlic, chopped
1 bunch spring onions
1 box cherry tomatoes, cut in half
Muscles, scrubbed and cleaned well
½ tsp oregano
1 Tbsp parsley, chopped
½ cup white wine

Directions:
Directions:
Heat oil in large sauce pan. Saute garlic and onion until onion is soft. Add tomatoes and simmer. Add cleaned muscles to sauce. Cook muscles until they open and then immediately remove them from the sauce. Add oregano, parsley, and white wine to the sauce. Cook sauce for a few more minutes until reduced. Remove from heat and pour over cooked muscles.
