For Rice:
1 lb. Arborio rice
1 tsp. saffron (1 packet)
˝ cup grated parmesan cheese


For Sauce:
2 Tbsp olive oil
˝ cup chopped onion
2 cloves minced garlic
1 lb. ground beef
˝ can tomato paste
˝ jar whole tomatoes, pureed
Salt and pepper to taste
1 cup frozen peas

To Assemble:
8 oz. Mozzarella cut into ˝” cubes
2 egg whites lightly beaten
2 cups fine breadcrumbs
Vegetable oil for frying

For Rice: Cook rice until tender and dry. Mix in saffron and parmesan while rice is hot. Then set mixture aside to cool.

For Sauce: Heat olive oil in saucepan. Sauté onion and garlic until translucent. Add ground beef and cook until browned. Stir in tomato paste and cook for 1 minute. Add in tomatoes, salt, and pepper. Bring to boil, then immediately reduce heat to low and let sauce simmer. 5 minutes before sauce is ready, add peas and let cook through. Set sauce aside to cool.

To assemble: Heat vegetable oil. Wet hands with egg whites. Take a palmful of rice and make a well in the center. Add a Tbsp of sauce and a few cubes of mozzarella. Top with another palmful of rice. Rub outside of rice ball with egg wash. Gently cover ball with breadcrumbs. Deep fry arincini in oil, no more than 2 or 3 at a time. Remove from oil and place on paper towel lined plate. Serve warm.

Arincini is a classic Sicilian dish. When mom makes them we know she has been in the kitchen for hours (typical of any dish she makes). The best is when one breaks while frying and we have to go ahead and "try" it to make sure it is ok :).
