1 3/4 C. Sugar
1 C. Cold Mashed Potatoes
3/4 C. Shortening
1 tsp. Cinnamon
1/2 tsp. Salt
1/2 tsp. nutmeg
3 Eggs
1 C. Buttermilk
1 tsp. Baking Soda
2 C. Flour

3/4 C. Walnuts
2 T. Flour
Directions:
Directions:
Combine sugar, mashed potatoes, shortening, cinnamon, salt, nutmeg and
cream them thoroughly, add eggs and mix well. Add buttermilk, baking soda and
flour.

Coat 3/4 C. of nuts with the 2 T. of flour and stir into batter.

Pour batter into a well greased 13 x 9 pan

Bake @ 350º for 50 to 60 minutes

Use with a quick caramel icing.
