1 cup white medium-grain rice
1/4 cup sugar
1/8 teaspoon salt
2 cup milk
2 cans eagle milk
1 teaspoon vanilla extract
Cinnamon to taste

Directions:
Directions:
Mix the rice, sugar, and salt in a large saucepan. Stir in the milk and add the whole piece of vanilla bean or the vanilla extract. Place the mixture over medium heat and bring to a boil, stirring often. Reduce the heat and simmer for 30 minutes or until the rice is soft and the milk becomes thick. Stir often.

Once it has simmered for 30 minutes place in a baking dish and cover with Cinnamon and Sugar Mixture. Cook at 350 for 20 minutes. This creates a crisp topping that goes fantastic with the smooth pudding.

Gramma always used Cinnamon and Sugar, but if you are looking for something a little different you can change up this basic recipe by mixing in nutmeg, cardamom, jam or preserves, raisins, dried apricots, dried cherries, dried cranberries( Tasty Choice) dried apples, dried peaches, walnuts, pecans, almonds, or a mixture of several of these options.

This was served at my Holiday table every year. It was one of my favorite things that my grandmother made because I felt connected to my heritage when I ate it. I continue to make it to this day for special occasions and have passed the recipe down to my 4 beautiful daughters
