2 eggs, beaten
1/4 cup milk
2 cups soft bread crumbs
3/4 cup onion finely chopped
1/3 cup (one pepper) finely chopped red or green pepper
2 to 4 tablespoons prepared horseradish
1 1/2 teaspoons salt
2 teaspoons mustard
2 pounds ground beef or 1 lb beef/1 lb deer
ketchup to spread on top

FOR GLUTEN FREE - substitute 2 1/2 cups ground oatmeal

In bowl combine all ingredients well with hands. Press into 9 x 5 x 3 loaf pan, large corning ware dish or small glass baking pan. Need at least 1' space to top of pan or will cook over! Bake at 350º for at least 1 hour or until done. Let stand for 10 min. Drain or soak up most of extra grease with paper towel. Meatloaf may be frozen up to 3 months. Makes 8 servings.
