4 small zucchini (2 green - peeled & 2 yellow - with skin) grated or sliced into sticks.
1 large red bell pepper (blackened, peeled, and cut into small squares). Can be done in the oven or bbq or you can buy.
2 tablespoon olive oil
2 teaspoon course sea salt
1 teaspoon garlic powder (not garlic salt!)
1/2 teaspoon black pepper
2 teaspoon Italian seasoning
6 - 8 ounces shredded mozzarella cheese

Directions:

Add zucchini to large frying pan with olive oil, salt, garlic powder, and pepper.
Cook over medium high heat, stirring occasionally until zucchini is tender, but not mushy.

Grease a shallow ovenproof 10" skillet with butter and sprinkle with 1 teaspoon of Italian seasoning
Place cooked zucchini in large clumps into skillet - 5 around the outer edge and one in the middle. Don't pat it down, but its ok if they touch each other.
Top clumps with:
Red bell pepper
1/2 the remaining Italian seasoning
Shredded mozzarella cheese - let it fall to the sides
Sprinkle cheese with remaining 1/2 teaspoon Italian seasoning

Place skillet under broiler until cheese is melted and slightly browned. 3-5 minutes, but keep an eye on it!

Serve immediately

I used this as a main dish, but it could be a side dish. If there are leftovers, keep in the same pan you cooked it in and cover with wrap to refrigerate. You can take out individual clumps or just uncover pan and re-heat in a 400 degree oven till bubbly - microwaving will make the cheese chewy.
