1 cup flour
5 tbsp. powdered sugar
½ cup butter
2 eggs
1½ cups sugar
¾ tsp. baking powder
¼ cup flour
2 cups rhubarb, cut into ¼- inch slices
1 tsp. vanilla

Directions:

Crust:
Mix together first three ingredients with a pastry blender or hands until coarse crumbs. Press into lightly-greased 9x9-inch pan and bake at 350 degrees for 15 minutes.

Filling:
Whisk together remaining ingredients, except rhubarb, until smooth. Add the rhubarb and stir to coat. Pour the rhubarb mixture over the crust. Bake at 350 degrees for 35-40 minutes.
