Ingredients: 1 cake/envelope dry yeast 2 cups very warm water 6 cups sifted flour 2 Tbsp. sugar 3 tsp. salt 2 Tbsp. soft shortening corn meal 1 egg white 1 Tbsp. cold water

Directions: |
Directions:Sprinkle yeast into water and stir until dissolved. Stir in 3 cups flour and sugar, salt, and shortening. Beat until smooth. Beat in enough flour to make a stiff dough. Knead 5 minutes or until smooth. Put in greased large bowl and turn until coated. Cover bowl and let rise (about 45 minutes or until about doubled). Punch down and cover and let rise 2nd time (about ½ hour). Punch down again, knead for about 1 minute and divide into 12 pieces. Shape into 12 little loaves of bread. Sprinkle cookie sheet with corn meal and set 2 inches apart. Cover, let rise 3rd time (30 minutes). Make several diagonal cuts on each loaf and brush with part of the beaten egg white and water.
Preheat oven to 400 degrees and place pan of hot water on bottom shelf of oven. Bake for 15 minutes. Brush again with egg white mixture. Bake 15 minutes more.
Makes 12 small loaves. |
