1 lb small creamer potatoes
3 cups cauliflower florets
1 package (about 10 oz) frozen peas
1/2 cup coconut milk (can use coconut milk creamer too)
2 tsp curry powder
salt to taste
pepper to taste
1/2 tsp garlic powder
2 TBSP chopped cilantro

Directions:
Directions:
Add the potatoes and cauliflower to the slow cooker. In a small dish, whisk together the coconut milk, curry powder, salt, pepper and garlic powder. Pour over the vegetables and stir to cimbine.
Turn the slow cooker to low for 4 hours.
When done, stir in the frozen peas and cilantro then let sit, cover for 15 minutes.
