Butterscotch mixture


Ingredients:

* 1 cup packed brown sugar
* 1/4 cup water
* 1/4 cup butter
* 1 Tbsp light corn syrup

Directions:

Mix ingredients in a sauce pan and boil until mixture forms a hard ball in cold water 250º.
 

Pudding

* 1 3/4 cups milk
* 1/2 cup sugar
* 1/4 tsp salt
* 3 Tbsp cornstarch
* 3 Tbsp flour
* 2 egg yolks slightly beaten

Directions:
Directions:
In a bowl stir together sugar, salt, cornstarch and flour, set aside. Heat milk in a double boiler, add flour and sugar mixture and cook until mixture thickens and boils 1 minute. Stir half of mixture into egg yolks until blended. Then pour egg mixture into the rest of the original pudding and boil one more minute. Add butterscotch mixture to pudding, stirring well and Cool. Fill cooled bake 9" pie shell with butterscotch filling. Serve topped with whipped cream.
* The family really loved this pie. It is a very rich dessert.
