2-3 TBS olive or canola oil
1 packet taco seasoning
3 boneless skinless chicken breasts
2-3 colored peppers
1 onion
3 cloves minced garlic
2 cups chicken broth
½ cup heavy cream
1 can petite diced tomatoes
8 oz. penne pasta
salt to taste

Directions:
Chop chicken into bite-sized pieces and sprinkle with ½ packet of taco seasoning
Dice peppers and onions
Drizzle oil in pan on med-high heat
Cook seasoned chicken pieces in sizzling hot oil until browned on both sides
Move cooked chicken to side plate and cover
Drizzle more oil in pan on med-high heat
Cook diced vegetables and remaining taco seasoning in hot oil until beginning to brown
Stir in garlic and cook for 1 more minute
Move cooked vegetables to side plate and cover
Add remaining ingredients to pan on med-high heat
Stir until boiling; cover and reduce heat to med-low
Cook for approx 15 minutes or until pasta is tender/al dente
If necessary, turn heat to high to boil off or reduce excess liquid
Stir chicken and vegetables back into pan with pasta and combine
Serve with shredded cheese, salsa and sour cream
