1 lb. eggplant
1 large garlic clove
1 tsp mint
1 T lemon juice
1 medium or small tomato
1/2 medium onion
1 tsp salt
1 tsp olive oil
1/2 hot green pepper (optional, could probably use pickled jalapeno)

Directions:
Directions:
1. Roast the eggplant in a baking dish in 350 oven about one hour, until completely soft. Skin may be charred and begin to split.
2. Cool eggplant, break open and scoop out the pulp.
3. Mash the pulp with a fork still as smooth as possible. Could be food processed. Add olive oil and lemon juice, mix.
4. Chop tomato, pepper, and onion finely. Add the eggplant and stir well.
5. Crush garlic with salt (use pestle or flat edge of knife). Stir into eggplant.
6. Stir in mint.
7. Serve in shallow bowl with garnish of tomatoes or parsley with pita bread or chips.
