3 ounces cream cheese, softened
5 to 9 drops oil of peppermint (may use other
flavored oils: spearmint, cinnamon, lemon etc.)
½ tablespoon butter flavoring
1 pound sifted 10 X sugar

Cream cream cheese with oil. (If you have a flavoring, rather than an oil you will need the larger amount.) Slowly beat in the powdered sugar. It gets very thick. It may be necessary to knead in the last of the sugar. Turn out on the counter and knead with hands until creamy and no grains remain. Roll out to about ¼ inch (I use two pieces of lattice on each side of the rolling pin to roll out the candy. That way I have a uniform surface.) Cut with small cutter. (These can be fancy shapes or the inside part of a doughnut cutter. I let them dry overnight or for several hours before I decorate them.) Decorate as desired with Wilton's Royal Frosting in the colors of your event. A tiny star flower and a leaf or two make them look special.

I made these mints for Frann, Terri, Ellen and many friends daughters when they married, as well as many, many teas. They are very good, easy to make and can be made far ahead and kept in a container with a tight fitting lid (packed in layers) or frozen. A drop flower on top makes the mints co-ordinate with the bride's or events colors.
