Pecan Pie


Ingredients:

* 3 eggs lightly beaten
* 1/2 cup white sugar
* 1 rounded Tbsp flour
* 1 1/2 cups dark corn syrup
* 1 tsp vanilla
* 1 cup of pecan halves
(Note: For added flavor toast the pecans.)
* 1 unbaked 9" pie shell
in a pie plate

Preheat oven to 350*f.
Whisk eggs in a medium mixing bowl. In a separate bowl blend together the sugar and flour. Pour the sugar mixture into the eggs and whisk to blend.
Stir in the syrup, vanilla and pecans and blend together to make an even mixture.
Pour the pie filling into the prepared pie shell and bake the pie until filling is set , about 45 minutes.
Remove pie from oven and cool for a few minutes before slicing to serve.
Serve plain or with your favorite whipped topping.
 

Toasted Pecans

* 4 Tbsp butter ( 1/2 stick)
* 3 cups pecan halves
* salt optional

Directions:

Preheat oven to 275*f.
Melt the butter in a sauce pan and stir in the pecans. Stir and coat evenly and pour the pecans on a cookie sheet and spread out in a single layer.
Roast the pecans in the oven for 30 to 40 minutes or until they are evenly browned. Remove from the oven and sprinkle with salt while they are still warm. When they are completely cool store them in air tight containers.
Note: Toasted pecans are delicious to snack on as a nut treat.
