Salmon Patties Recipe

Ingredients:  
1 can of pink or red salmon, drained and cleaned of skin and bones
¼ cup chopped onion
¼ cup bread crumbs
1 T ketchup
1 T mayonnaise
2-3 T of oil for browning

Directions:
Directions:
Flake the salmon
Add remaining ingredients
Mix lightly
Form into patties (should make 4)
Place patties in skillet and brown on medium heat 3-5 minutes per side
* Optional: At this point you may press both sides of the patties into breadcrumbs.

Andrea and I are pictured here on one of our trips to White Lake in Canada. No, we were not fishing for salmon! The lake had blue gill, sun fish and walleye. Dad would clean them and fry them up fresh! Aunt Marie and Uncle Delbert would often go with us. Mom made our matching outfits as she made a lot of our clothes. She was a very talented seamstress, sewing us dresses for special occasions! I don't know why we are all dressed up in Canada?

The salmon patties were a fish Friday meal Mom would usually serve with Mac ‘n Cheese and creamed peas. Rice or potatoes would be equally delicious with this dish. Makes 4.

Andrea - I substitue 1 egg for the ketchup and mayonnaise.
