* 1 cup Softasilk cake flour, sifted
* 3/4 cup plus 2 Tbsp granulated sugar
* 12 egg whites
* 1 1/2 tsp cream of tartar
* 1/4 tsp salt
* 3/4 cup granulated sugar
* 1 1/2 tsp vanilla
* 1/2 tsp almond extract

Pour egg whites into a large mixing bowl, (if egg whites are brought to room temperature you will get more volume out of them). In a small bowl, combine sifted flour and 3/4 cup plus 2 Tbsp sugar and set aside. Whip egg whites on high until frothy, then add cream of tartar and salt and beat until foamy. Turn mixer down to medium speed and gradually add the second 3/4 cup of sugar, two tablespoons at a time. After sugar is added turn the mixer to high and beat until meringue holds stiff peaks, it will look glossy. Fold in flavorings. Put flour and sugar mixture in sifter, and sift half of it over the meringue mixture and gently fold in with a wire wisk. When it disappears, sift and fold in second half of the flour and sugar mixture. With a rubber spatula push the batter into a very clean ungreased tube pan. Push and level batter gently against sides of pan to prevent large air pockets. Work as quickly as possible. Bake at 375º for 32 minutes. The top will be golden brown. Immediately invert the pan over a funnel or bottle to hang while it cools. When completely cool, cut around edges and gently lift cake out of pan.
