Ingredients: 17 lemons; fresh, not from grocery store. Washed. 750 grams Everclear (190 proof our grain alcohol) 1 liter of pure water 1 1/2 pounds sugar

Directions:Take care that lemons are washed well. Peel lemons so that only the yellow peel comes off. NO WHITE PULP or your drink will be bitter. Pour Everclear over lemon peels. Seal in airtight container and allow to sit, covered, for 14 days. Strain through coffee filters 2-3 times to remove any peels and sediment. On 14th day, boil the water and sugar to dissolve it well. Allow to cool. Stir sugar syrup into lemon/Everclear mixture. Bottle in containers with airtight lids. Refrigerate or freeze for an additional 2 weeks. Serve or give as gifts. |

Notes: This is a wonderfully refreshing, lemony limoncello. I use only organic, fresh lemons as I'm lucky enough to live in Arizona where they are plentiful. Store bought lemons have a wax sprayed on them. Do not use these. The Italians drink this as an after dinner aperitif, or "digestive", only pouring an ounce or so per serving.
This recipe is similar to a recipe I received from Cara Quinn of Duespaghetti blog. Cara is a long-time family friend who spent 9 years in Italy, married her soulmate she met there and enjoys her newly adopted culture.
