Directions:

Make slits in pork and stick in some slivered garlic. Salt and pepper and put into a roasting pan in a 450º oven until it starts to sizzle and the bottom of the pan gets brown. Lower to 350º, add a small amount of water and cook until almost tender (about 40 min/lb for a rolled roast). Add peeled and quartered potatoes about ½ hour before done; salt and pepper well. Add water when needed. Potatoes should get nice and brown from the droppings in the bottom of the pan. You can take the meat out to sit for 10-15 min. and turn the oven up to 450º to finish cooking/browning the potatoes.
