¼ cup butter
1 tsp sugar
1 Tbsp olive oil
½ cup dry red wine
1½ pounds ground beef
½ green pepper, chopped
½ tsp celery salt
1 large onion, chopped
2 crumbled bay leaves
½ pound fresh mushrooms, chopped
Dash cayenne pepper
4 cloves garlic, minced
Salt and pepper
1½ cans tomato paste
1 28-ounce can plum tomatoes
½ Tbsp Worcestershire sauce
½ Tbsp bitters

In a large kettle, heat butter and olive oil (ahem, actually Meme doesn’t use either of these, she just browns the meat alone). Add meat and stir until browned. Drain fat. Add all other ingredients. Cover and simmer very slowly for at least 3 hours, stirring occasionally. Or, dump it in a crock pot and cook it for up to 18 hours. If sauce is too thick, thin with wine.
