10 pieces of chicken thighs, skin removed
cooking oil
Sofrito: diced onion, green pepper, garlic
cloves, red pepper
2 packets of Sazon
2 bay leaves
1 small can tomato sauce
¾ cup diced tomatoes
10 green olives with pimentos
seasoning: Adobo, oregano, black pepper,
cumin, cilantro
1 cup white rice
8 cups chicken stock and water
Optional: diced ham or peas
Optional: ½ cup white wine

Directions:
Directions:
Saute chicken in a large pot over medium-high heat.
Cook for 8 minutes, turning once.
Reduce heat and add sofrito and tomato. Cook for
3 minutes stirring frequently. Add rice, ham, wine
and olives. Cook 1 minute. Add the water/chicken
broth and bring to a boil. Cover and reduce to a
simmer for 20 minutes.


Serve with tostones and a few sprinkles of
hot sauce if desired.
