⅔ cup sugar
⅓ cup cornstarch
½ teaspoon salt
3 cups whole milk
4 egg yolks, slightly beaten
2 tablespoons softened butter
2 teaspoons vanilla
¾ cup flaked coconut
1 baked pie shell (see "Pie Shell" recipe)

Directions:
Directions:
Stir together sugar, cornstarch and salt in sauce pan. Blend milk and egg yolks, then gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir one minute.

Remove from heat, blend in butter, vanilla and coconut. Pour into cooled pie shell.

Spread meringue (4 egg whites, ¼+ teaspoon cream of tartar, 8 tablespoons sugar, ½ teaspoon vanilla) over filling and sprinkle flaked coconut (¼ cup or more) on the meringue.

Bake at 350º for about 15 minutes or until a delicate brown.
