2 (1 lb.) pkg. frozen hash browns
3/4 c. melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 c. finely chopped onion
1 c. cream of chicken soup
1 pt. sour cream
1/2 pkg. Ranch dressing
2 c. grated sharp cheddar cheese
2 c. crushed cornflakes

Directions:
Directions:
Thaw potatoes. Combine in large mixing bowl with 1/2 of the butter. Season with salt, pepper, onions, soup, sour cream, cheese and Ranch dressing. Blend thoroughly, pour into buttered 3 quart casserole.

Mix remaining butter with either the potato chips or cornflakes and sprinkle over potatoes. Bake at 350 degrees for 45 minutes or until done.

The ranch dressing kicks this casserole up a notch.

I never do the topping because I would have to buy a giant box of cornflakes and throw the rest away. I don't like to waste food. Maybe next time I'll buy the cornflakes and give what I don't use to the horses. I just thought of that!
