5-6 lb. pork shoulder or butt
2 T. liquid smoke
⅛ cup Hawaiian Alaea Salt
orange juice

Directions:
Directions:
Preheat oven to 250º F

Allow pork to sit on counter for 90 min
to reach room temperature before roasting.
Score the pork butt on all sides with a diamond
pattern (¼ inch incisions).
Rub the pork with the liquid smoke and salt.
Place the pork on a rack in a 9x13 inch pan lined with foil.
Pour ¼ inch of orange juice on the bottom.
Cover with foil (or banana leaves) - optional
and cook for 8 hours until fully cooked and tender.
Remove from oven and shred meat.

Adjust the seasoning and moisture
of the pork with salted water if needed.

Optional: Serve with cabbage on the side,
grilled pineapple, or homemade Hawaiian
macaroni salad.

This dish can also be made in a slow cooker.
