Boneless leg of lamb 2- 2 1/2 lb.
4 garlic cloves minced
1 1/2 TBSP salt
Sprinkle of black pepper
2 TBSP oregano
1 tsp thyme
2 TBSP olive oil

Directions:
Directions:
Roll lamb up and the with butcher twine
Mix seasoning and oil in a small bowl. Rub all sides of the lamb roast. Cover with plastic wrap and refrigerate for 1 hour.
Heat smoker to 250 degrees
Smoke lamb roast on rack until internal temperature reaches 145- 150 degrees about 3-4 hours
Let rest 15 minutes before slicing.
