1 1/3 c flour
1/2 t baking soda
1/4 t baking powder
5 1/3 T softened butter
2/3 c sugar
2 large eggs
1 c mashed ripe banana
1/2 c chopped nuts
3/4 t salt

Directions:
Directions:
In a large bowl, beat butter, sugar and eggs until lightened in color and texture. Beat in flour, salt, baking soda and baking powder. Stir in banana and nuts. Pour batter into greased and floured 8 1/2 X 4 1/2 inch loaf pan. Bake at 350º for 50 - 60 minutes or until toothpick inserted into center of loaf comes out clean. Cool 5 - 10 minutes before removing from pan. Cool completely on rack.

Wait. . . why is my recipe in Aunt Irma's cook book? Did Aunt Irma make this recipe? No, she didn't. But, from the time she became sick, getting Aunt Irma to eat ANYTHING was a real challenge. The docs kept telling her that it was important that she eat -- especially protein. So I baked banana bread for her -- and she would usually eat it. My secret: Protein powder. I added a substantial amount of protein powder (up to a cup) to the banana bread. It didn't change the taste, and we were able to at least get a bit of protein into Aunt Irma.
