3 or 4 whole red potatoes (2-1/2 c)
1/2 c chopped purple onion
1-1/4 tsp salt
1 tsp white granulated sugar
1-1/2 tsp celery seed
1 tsp white vinegar
3/4 c mayonnaise (I use Hellmann’s)

Directions:
Directions:
Boil the whole red potatoes in their skins in slightly salted water until just knife-pierce tender. Cool in the boil water, drain. Place whole potatoes in a ziplock bag with the chopped onion and refrigerate overnight. Reserve the onion, and cut the unpeeled potatoes into 1-1/2-inch cubes. Combine remaining ingredients in a large mixing bowl; gently mix in the onion and potatoes.
