1 cup uncooked jasmine rice
1 1/2 Tbsp butter
3 tsp extra virgin olive oil
1/2 cup chopped yellow onion
1/2 cup roughly chopped fresh mint
Zest of one lemon
4 tsp fresh lemon juice
1/4 cup chopped fresh parsley
1 tsp kosher salt
1/2 cup toasted pine nuts

Thoughly wash rice under the faucet. When water is run over rice in a strainer the water should go from cloudy to clear.
Melt butter in a pan over medium heat and coat rice, cook for three minutes and stir constantly.
In a medium saucepan bring salted water to a boil.
Place rice into boiling water.
Cover and reduce the heat to medium low.
Simmer for 20 minutes until the rice is tender.
Pour the rice through a mesh strainer. Drain. Rinse with cold water until the rice is cool.
Heat 1 tsp of olive oil in a small saucepan over medium heat.
Add the chopped onion and cook 3 minutes until translucent. Stir occasionally.
Place the rice and onion into a large bowl and mix.
Add the mint, lemon zest, lemon juice, parsley, salt, pine nuts, remaining 2 tsp of olive oil.
Toss.
Serve at room temperature.
