Ingredients:  
Ingredients:  
2 onions, sliced
1 large green pepper, sliced
1 -2 cloves garlic, minced
2 cups sliced mushrooms
2-3 Tablespoons oil
2-3 large cans tomato sauce or tomato puree
2-3 cans tomato paste
salt and pepper to taste

1-2 lb. ground chuck
1/2 onion, chopped
10 saltine crackers, crushed
a dash or two of pepper
OR
1-2 lb.hot/ sweet Italian sausage cooked separately and drained...and cut in chunks...

Directions:
Directions:
Pour 2-3 Tbsp.oil in a large cooking pot.
Add onions, pepper and garlic...
Saute until onions are transparent...
add mushrooms
Add tomato sauce, tomato paste, salt and pepper...
Simmer this on low heat...stirring often...

While this is simmering,, prepare meatballs or Italian sausage...

Meatballs:
Mix ground chuck,1/2 sliced onion, crushed saltines and sliced or diced pepper.
Form into meatballs...
Brown the meatballs...

Sausage:
Start ooking them in a little water in a skillet.......let them cook until water is gone and links are browning...Turn often to brown evenly...

Prepare vermicelli pasta. (or thin spaghetti)
Serve on a dinner plate topped with the spaghetti sauce, meatballs or sausage, and grated parmesan cheese...

Eat until
you couldn't take a bite
Moocha maacha...
though it takes all night
Nothin' like
spaghetti-night, and then
T'morra night, y'betcha
we'll do it all again!
