1/2 TSP CREAM OF TARTAR

BEAT EGG WHITES AND CREAM OF TARTAR AT HIGH SPEED UNTIL FOAMY. GRADUALLY ADD SUGAR UNTIL STIFF PEAKS FORM. SPREAD OVER FILLING AND BAKE AT 350º UNTIL BROWN.

ADD SUGAR GRADUALLY BEAT IN WELL BEFORE ADDING MORE. SPREAD ALL THE WAY TO THE EDGES OF THE PIE FILLING AND SEAL BECAUSE THE MERINGUE WILL SHRINK AND PULL AWAY FROM THE CRUST
