Ingredients: For 6 Servings (I always double this recipe to make 12 servings) 14 to 16 oz sausage (optional) 2 ½ cups whole milk 5 large eggs 1 t. ground cumin (I use ½) ½ t. salt ¼ t. pepper 6 slices of sourdough bread (trim crusts off) DON’T ADD MORE BREAD! 1 ¾ cup shredded hot pepper monterey jack cheese (about 7 oz) Optional: One 4 oz can mild green chillies (drained) ½ cup freshly chopped cilantro

Directions:* Butter baking dish. Cook sausage and drain. Whisk next 5 ingredients together in large bowl to blend. Place 2 slices of bread on bottom of dish. Sprinkle with ¾ cup cheese then ½ of each: cilantro, chillies & sausage. Repeat layering with bread, etc. Pour ½ of egg mixture over strata then top with 2 slices of bread. Pour remaining egg mixture over all and sprinkle with ¼ cup cheese. Cover and chill overnight. Bake at 350º for 55 minutes until puffed and golden. Let sit 5 minutes before serving. |

Notes: I normally make one with sausage and one without. If I can get Neese's sausage from NC, I prefer to use it instead of chorizo. Don’t add more bread-it changes the consistency.
