2 1/4 cups sugar
4 eggs
Mix until thick
Add:
1/2 teaspoon salt
4 cups 1/2 and 1/2
5 cups milk
1 1/4 Tablespoons maple extract
1 Tablespoon vanilla extract
1 cup pecans (optional)

This is an old recipe that uses raw eggs. Modern recipes would call for slowly heating the eggs in milk and sugar to cook them.

Place the ingredients in an ice cream freezer and churn.

For peppermint ice cream, use 1/2 Tbl of peppermint extract and 1 1/2 Tbl vanilla with 15 crushed peppermint candies.
