2 large onions, chopped
6 T. butter
4 cloves garlic, minced
2 lb. bag sauerkraut (or more if you prefer)
3-4 lb. pork shoulder/butt roast
salt and pepper
(Optional: slices of apples and
drizzle with a little apple cider vinegar)

Directions:
Directions:
Preheat oven to 250º F.
Melt butter over medium heat in a saute pan.
Add onions and saute for 10-15 min.
Empty sauerkraut in a colander. Rinse and squeeze out liquid.
Add garlic to the onions and saute for 1-2 min.
Add sauerkraut to the pan, cook for 15 min, adding more butter
if dry.
Season pork and place into a roasting pan. Spoon sauerkraut over
roast. Cover with lid and cook for 5-6 hours until tender.
Check occasionally and add a little water if necessary.

When pork is ready shred with a fork.
Mix with the sauerkraut.
Serve over mashed potatoes, buttered noodles or spaetzle.

Variation: Add German Sausage and potatoes to the
roasting pan.
