4 lbs. chuck roast
1 large onion, diced
1 green pepper, diced
3 cloves garlic, minced
oil
1 ½ tsp. cumin
1 T. chili powder
2 bay leaves
salt, pepper
1 cup flour
2 large cans stewed tomatoes
2 cups beef broth
1 cup water
4 potatoes, quartered
3 carrots, cut in small pieces

Directions:
Directions:
Preheat oven to 250º F.

Season the flour on a large plate and coat the meat with it.
Heat a skillet and sear the meat on all sides in hot oil.
Remove meat from the skillet and transfer to a large
roaster pan with lid.
Saute the onion, pepper, garlic and add to the roaster pan.
Add the stewed tomatoes, broth, water, potatoes and
carrots. Adjust seasoning.

Roast meat long and slow for 2 hours. Test for doneness.
