2 slightly beaten eggs
6 tablespoons milk
1 10-ounce package frozen chopped spinach, thawed and well drained
\1 cup shredded Swiss cheese (4 ounces)
1 cup chopped water chestnuts
1 teaspoon thinly sliced green onion

Directions:
Directions:
In a bowl, mix eggs, milk, spinach, half of the cheese, water chestnuts, green onion, and salt.
Spray a 1 quart casserole with cooking spray. Put mixture into casserole and bake at 350º F for about 40 minutes or until knife inserted into center comes out clean. Sprinkle with remaining cheese and return to oven. Cook an additional 5 minutes or until cheese is melted.

This is a great side dish. You can also bake it in individual ramekins but reduce the initial cooking time to about 20-25 minutes.
