Pangrattato (breadcrumbs)
Olio extravergine d’oliva (Extra Virgin Olive oil)

Directions:
Lavate le zucchine, spuntatele e con una grattugia a fori larghi grattugiatele in uno scolapasta, lasciandole riposare per almeno mezz’ora per perdere l’acqua di vegetazione.
Lessate le patate. Scolatele, pelatele e passatele allo schiaccia patate, raccogliendo la purea in una ciotola.
Strizzate le zucchine e aggiungetele alla purea di patate.
Unite le uova, i formaggi grattugiati, una presa di sale e 40 g di pangrattato.
Mescolate a fondo. Tagliate la scamorza a fettine sottili.

Wash the zucchini, sprinkle them and with a grated grate on large holes in a colander, leaving them to rest for at least half an hour to lose the water of vegetation.
Boil the potatoes. Drain, peel and pass them to the crushed potatoes, collecting the puree in a bowl.
Squeeze the zucchini and add them to the potato puree.
Add the eggs, grated cheeses, a pinch of salt and 40 g of breadcrumbs. Mix thoroughly. Cut the scamorza into thin slices.

Gayle always has all the ingredients for her own unique recipe to whip up a wonderful Spinach Quiche (6 eggs beaten, 1 grated onion, 1 package Spinach Frozen, 1 6 oz grated cheese, bacon optional, salt, pepper, unbaked pie shell, 350 degree oven, 35 minutes) that resembles Quiche Florentine (but is better) - Ingredients. 1 1⁄2 cups heavy whipping cream, 1/2 cup milk. 4 eggs. 8 ounces shredded Parmesan cheese, 1 cup diced Swiss or Jack cheese, 4 cups fresh spinach. 1/2 teaspoon salt. 1/4 teaspoon white pepper, (cooked ham or bacon optional) deep dish unbaked pie shell. On the sweet side, there are a variety of recipes online for a Mexican Flan de Cajeta (con Queso?) with Cajeta (caramelized sauce from Goat's milk), heavy cream, evaporated milk and/or sweetened condensed milk, vanilla, cinnamon or canela as essentials along with the usual eggs, egg yokes, salt, orange peels etc. Some recipes call for ingredients such as cloves and coarsely ground dark-roast coffee. What is often offered as creme caramel pales in comparison to these. Mangia, Mangia, Tutti Mangiare
