For the Blueberry filling
6 cups fresh blueberries (for this I used 1/2 blueberries & 1/2 strawberries
1 cup granulated cane sugar
2 t grated lemon zest
3 T unbleached all-purpose flour

For the Buttery Biscuit Crumble Topping
1 cup plus 5 T unbleached all-purpose flour
6 T granulated cane sugar
1 1/2 t baking powder
1/4 t fine granulated sea salt
6 T unsalted butter, chilled & cut into bits
1 large egg
1 t vanilla
1 T granulated cane sugar
1/2 t cinnamon
1/4 t freshly ground nutmeg

Arrange oven rack in lower third of oven & preheat oven to 375 degrees.
Lightly butter baking dish (2 qt).
Place blueberries into prepared baking dish. In a small bowl, combine sugar
and lemon zest. Work the zest into the sugar with your fingers to release the oils
for maximum flavor). Add the flour and whisk until thoroughly combined. Sprinkle mixture evenly
over berries and toss gently. Make sure sugar is even over fruit. Set aside.
In a medium bowl, whisk together flour, sugar, baking powder and salt until well
blended. Using a pastry blender, cut butter into flour mixture until it resembles a coarse meal
with small pea-sized pieces of butter. In a small bowl, combine egg and vanilla ...then mix
gently into flour mixture until dough starts to hold together. Can use fingertips until well
blended taking care not to overwork the dough.
Sprinkle biscuit crumble topping evenly over fruit filling. Sprinkle sugar over biscuit mixture with
cinnamon and nutmeg.
Bake in preheated oven until topping is golden brown and filling is cooked through & bubbly,
about 40-45 minutes. To prevent over browning of biscuit, cover with aluminum foil after 25
minutes of baking. Remove foil & carefully transfer to wire rack to cool.
Serve cobbler warm a la mode or with fresh whipped cream....OR BOTH!!!
