Ingredients: 1 can red enchilada sauce or your favorite home made recipe, if desired 1 can water, if sauce is too hot 3 tbsp flour mixed with small amount of water in shaker pinch of salt (Add to enchilada sauce before heating to keep from lumping.)
1 onion - chopped 1 c grated cheese shredded lettuce corn tortillas eggs Chili

Directions: |
Directions:Cook enchilada sauce over low heat until sauce has thickened.
Fry tortilla slightly in hot oil. Dip in enchilada sauce and remove to plate. Add chopped onion and grated cheese. Continue to stack desired number of tortillas with onions and cheese.
Fry egg until white no longer runs and place on top of stacked tortillas. Top with chili and additional enchilada sauce. |

Notes: This was our favorite "special" supper growing up. Mother always used the steak plates and kept the metal plate in the oven to keep it warm while she was frying the tortillas. She always had home made chili with it. Pinto or refried beans and maybe some fried rice top it all off.
