Ingredients:  
3 cans salmon without skin or bones
1 avocado
1-2 tomatoes
½ small red onion, diced
olive oil
black pepper
(optional: cucumber)
white rice

Directions:
Directions:
Drain the cans of salmon and put in a salad bowl.
Flake the salmon apart with a fork.
Cut the tomatoes and avocado into chucks and add
to the bowl.
Add the diced red onion.
Drizzle a good amount of olive oil.
Season with pepper.
Serve cold over white rice.

Warm Version of Salmon Salad:
Saute in a skillet the salmon with
Spanish Sofrito, 8 oz. can of tomato sauce,
diced potatoes, ¼ cup of water, adobo seasoning
and a packet of Sazon.
Simmer until the potatoes are tender and
serve over rice with avocado and tomato
slices on the side. Drizzle with olive oil.
