Ingredients:  
½ c. finely chopped onion
½ c. finely chopped carrots
¼ c. butter
¼ c. sifted flour
1 quart chicken stock(or 2 cans chicken broth)
⅛ tsp. baking soda
1 lb. grated American Cheese
1 quart milk, room temperature

Directions:
Directions:
Saute' onion and carrots in butter.
Stir in flour. Don't brown. Add chicken broth.
Salt & pepper to taste.
Add baking soda, cheese and milk. Heat until good and hot and thickened.

Note: Parsley, cooked broccoli flowerets and cooked diced chicken can also be added, if desired.
