1 Chicken Breast
1 Potato, diced
½ cup diced carrots
½ cup diced celery
½ cup, finely chopped, onions
½ lb.(or 1 medium can) Hatch chilies (hot or mild)
1 tsp. cumin
½ tsp. ground sage
½ tsp. crushed red pepper
2 cups shredded cheese
1 can cream of mushroom soup
1 can cream of chicken soup
2 cans water (or substitute milk)
2 cups water
2 tsp. chicken bullion

Directions:

Cut chicken breast into ½" cubes. Saute' chicken, chilies and onions in skillet with cumin, sage and crushed red pepper.
Empty soup cans into slow cooker. Add cans of water/milk plus 2 cups water & bullion. Add carrots, celery and potato to soup mixture. Add cooked chicken mixture to soup mixture. Cook on high for about 3 hours. Reduce to low for another 3 hours, adding the cheese about an hour before it is through cooking. Stir well.

This makes 2 quarts. You can increase the recipe for 4 or 6 quarts. You can also add more chicken, potatoes, etc. if you like a thicker soup. Nothing says you can't add other items that you like in your soups/stews.
