2 Tbsp. olive oil
1 small onion, chopped
1 cup shredded carrots
5 cups water
1 (6.2 oz) pkg. fast-cooking long grain & wild rice, seasoning packet reserved
1 (10 oz) pkg. frozen chopped broccoli
2 cups chopped, cooked rotisserie chicken
1 (8 oz) loaf Velveeta, cubed
1 (10.75 oz) can Cream Chicken Soup, undiluted

Directions:
Directions:
Heat oil in soup pot over medium heat. Add onion and carrots. Saute 5 minutes. Add water, seasoning packet from rice, broccoli & chicken. Bring to a boil and stir in rice. Reduce heat, cover and cook 5 minutes more. Add cheese and soup. Cook, stirring constantly, 5 minutes, or until cheese melts. Serve immediately
