Strawberry Cake

18¼ oz pkg white cake mix
3 oz pkg strawberry gelatin mix
4 eggs
¾ cup oil
½ cup frozen strawberries, thawed and undrained
½ water

Frosting

¼ cup butter, softened
½ cup fresh strawberries, chopped, divided
16 oz powdered sugar, divided
½ tsp vanilla or almond extract

Combine all ingredients in a large mixing bowl. Beat at medium speed with an electric mixer until well blended. Pour into a greased and floured 9x13 pan and bake at 350º for 33-35 minutes; cool. Spread frosting over cooled cake. Garnish with fresh ½ strawberry on each piece.

Frosting

Beat butter and vanilla or almond extract at medium speed with an electric mixer until light and fluffy. Add ¼ cup strawberries and about ⅓ sugar, beating until blended. Gradually add remaining sugar, beating until creamy. Fold in remaining ¼ cup strawberries. Makes 2½ cups.
