3 cups chopped crunchy veggies: romaine, radishes, cukes, bell pepper, carrots, celery, fennel. (Can also add corn, black beans, quinoa or Farro, but double dressing)
2 scallions thin slice
1/3 c. Sunflower seeds
2 T. Lime juice and zest
4 T. Olive oil
1/4 t. Salt and pepper
1/4 t. Southwestern spice
2 T. Mint or basil thin slice
1/2 c. Feta, quest fresco or ricotta salata

Directions:

Mix veggies, cheese, scallions, seed and herbs.
Whisk lime juice, oil, seasonings.
Season to taste.
Garnish with herb.
