1 tsp vanilla
1 tsp soda
1 tsp salt
3 large eggs
1-1/2 c canola oil
3 c all-purpose flour
2 ripe bananas, mashed
3 c white granulated sugar
1/2 of a 20-oz can of crushed pineapple with juice
1 c chopped pecans or walnuts (optional)

Preheat oven to 350˚F. Line three foil loaf pans or one tube pan with parchment. Grease with shortening or cooking spray. Beat all ingredients together for 4 minutes. Pour batter into pans; cook 1 hour until toothpick inserted in center comes out clean.
