1½ lbs beef cubes
16 oz can diced stewed tomatoes
6 carrots, chopped in chunks
1 c celery chunks
4 potatoes, cut in chunks
2-3 medium onions, diced or sliced
1 tsp salt
1 Tbsp sugar
¼ c. Tapioca (quick cooking type)

Clean & dice vegetables; put everything in large Dutch Oven pan. Bake COVERED at 250 F for 5 hours. Don’t peek—just let bake. No need to brown meat first. This makes its own gravy. You can adjust amount of carrots & potatoes if you like more of one over the other.

I have to rag on my daughter, Jennifer Stuckey Bycroft. As a brand new bride, without much experience in cooking since she was a Tom-boy, athletic and lived outside, she made this for pastor- hubby Matt. However, she was only familiar with Tapioca pudding (as we had it often at home) so she put a box of tapioca pudding in the stew! They ate it but she said it didn’t taste quite right. 😁
