8 oz. cream cheese (softened)
1 c. sour cream
1/2 c. grated parmesan cheese
1 c. grated fontina cheese
1/2 yellow bell pepper, finely chopped
1/2 red bell pepper, finely chopped
1 box (10 oz.) frozen chopped spinach (thawed and drained)
3 cloves minced garlic
1 1/2 tsp. Cajun Seasoning
Pinch of cayenne pepper
Black pepper to taste
1 can or jar (14 oz.) artichoke hearts, drained and well chopped
4 green onions, thinly sliced

Preheat oven to 350º. In a large bowl mix cream cheese, sour cream, Parmesan, 1/2 c. of Fontina, and the bell peppers. Squeeze out any excess liquid from the thawed spinach and add to the bowl. Add garlic, Cajun seasoning, cayenne, and a bit of black pepper. Stir vigorously until thoroughly mixed. Add the chopped artichoke hearts and half of the green onions and stir well. Spoon mixture into a 8 x 8 inch baking dish. Sprinkle the remaining Fontina evenly over the top. Bake for 30 minutes or until the cheese on top is bubbly and melted. Garnish with remaining green onions. Serve warm.
Great with pita chips or tortilla chips.
