½ C room temperature coconut oil
½ tsp baking soda
½ tsp baking powder
¼ tsp cinnamon
¼ tsp sea salt
1 tsp vanilla extract
3 Tbsp aqua faba (juice from a can of chickpeas)
1 C plus 2 Tbsp all purpose flour
½ C unsweetened coconut flakes
¾ C vegan chocolate chips

1. Preheat the over to 350ºF
2. Line a baking sheet with parchment paper
3. In a mixing bowl, cream the coconut oil and sugar with an electric mixer, just until combined
4. Add the baking soda, baking powder, cinnamon, salt, vanilla, and aqua faba and beat to combine
5. Add the flour to the wet mixture and beat until well mixed
6. Fold in chocolate chips and coconut with a spatula
7. Spoon rounded tablespoons onto a baking sheet then flatten each cookie using the palm of your hand
8. Bake for 9-11 minutes or until golden (For softer cookies bake for 9)
9. Let cool on the baking sheet for 1-2 minutes then transfer to wire baking rack to cool
