Loretta Lynn's Chicken and Dumplin's Recipe

1 large whole chicken OR 1 rotisserie chicken.
3 garlic cloves
salt and pepper

Dumplin's:

2 c self-rising flour
1 tsp salt
1 c water
1 egg beaten
6 - 8 c chicken broth
1/2 c heavy cream
1 T cornstarch (optional)

Directions:
Directions:
In a large pot, boil the chicken in water with the garlic for 2 hours. (I add celery and onions, but that is not in Loretta's recipe!) Add more water as needed. Drain the chicken and reserve the broth. Let chicken cool. Pull off bones and shred.

(You can use a rotisserie chicken but then you have to make or buy chicken broth. It is easier, but not quite as good.)

For the dumplin's, in a large bowl, combine flour and salt. Gradually add the water. Stir in the egg. Knead the dough well and roll out onto a floured surface. Cut the dough into strips. Bring the chicken broth to a boil. (If not "chickeny" enough, I add a couple of bouillon cubes). Drop the dough into the boiling broth. Cover and simmer about 10 minutes. Add the cream and the chicken and simmer for 5-10 minutes longer. Add the cornstarch if it needs to be thicker.
