2 T. butter
1 medium onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
4 cups chopped cooked chicken or turkey
1 can cream of mushroom soup
1 can cream of chicken soup
1 10 oz. can diced tomatoes and chilis (Rotel)
1 tsp chili powder
1 tsp ground cumin
2 cups crushed tortilla chips, about 1 bag
2 cups shredded cheese (cheddar or Colby, and Monterey Jack)

Cilantro, chopped for garnish to serve

Preheat oven to 325º F.
Melt butter in large skillet over medium heat. Add chopped vegetables and saute 8 minutes or until tender.
Stir in chopped chicken or turkey and next 5 ingredients and simmer together for 2 minutes.
Place 1/2 of crushed chips in bottom of greased 9" x 13" pan. Layer with hot mixture and shredded cheese. Repeat layers, ending with cheese.
Bake uncovered 35-45 minutes, until thoroughly heated.
Garnish with chopped cilantro.
