1 c vegetable oil
3 c granulated sugar
4 large eggs
15-oz can pumpkin
2/3 c water
1 teaspoon vanilla extract
3-1/2 c all-purpose flour
1/2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1/8 tsp ground cloves

Directions:
Directions:
Preheat oven to 350°F. Grease and flour four one-pound aluminum coffee cans or two large loaf pans. Cream sugar and oil together in a mixing bowl. Beat in eggs, one at a time. Then beat in pumpkin, water and vanilla until blended. In a separate bowl whisk together all dry ingredients. Add dry ingredients slowly to pumpkin mixture. Fill greased and floured pans half full. Bake for one hour. Test for doneness with a toothpick or cake tester. Remove from oven to cool on a wire rack for 10 minutes. Turn out and cool bread completely before wrapping. Freezes well.
